To Corn Syrup or Not to Corn Syrup?

It’s a question on everyone’s minds: Should I eliminate corn syrup? Even more importantly, how can I do that?

Corn syrup is a relatively new kid on the block when it comes to food. It really first appeared in the United States in the mid 1960’s, and exploded into foods in the 1980’s. The science behind it is in its infancy, but many major diseases have been related to it, including type 2 diabetes, a disease that is quickly emerging as one of the most common, expensive, and debilitating in history. It also robs the body of vitamins and is thought to cause inflammation, increase blood pressure, even possibly cause liver disease. It likely makes the body store more fat tissue as well.

Americans consume over 65 pounds of corn syrup a year, with 50 lbs of it directly from high fructose corn syrup! If that sounds like too much to you, you are probably right. What’s more, since the appearance of corn syrup, people didn’t cut back on sugar at all. In fact, overall corn syrup consumption has doubled since the 1980’s while cane sugar consumption has not decreased. What is the biggest food source of high fructose corn syrup? By far, it is soda and “juice” drinks, including Gatorade and Powerade. One can of soda or sports drink has equal to or more than 45 grams of sugar (1/4 cup as high fructose corn syrup).

Quite simply, the take home message is to limit or eliminate sodas and sweetened beverages, and skip overly processed foods. Instead try to drink water. For a little flavor, try unsweetened, freshly brewed tea or even coffee (decaf for those of us sensitive to caffeine). For the kids out there, well, just like grandma would have suggested, drink your milk. Or water.

RECIPES:
  

SHUSWAP LATE SUMMER SALAD

1 - large head Bok Choy
4 - green onions
1 - pkg. Sapporo Ichiban soup (any flavour)
50g -sliced almonds
1/8c -red wine vinegar
1/8c - olive oil (voo or evoo works)
4 tsp - sugar (or 2 envelopes of Splenda)
2 tbs - butter
2 - 12oz cans Kokanee Beer (optional)

Method:
Chop the bok choy and the green onions very fine and put in a medium salad bowl. Open beer, drink partially, relax.
Break up the ichiban noodles very fine. Discard the poisonous flavour packet, then brown together with the almonds in the butter, set aside to cool.
Finish 1st beer, relax and enjoy the sunshine.
Mix together oil, vinegar and sweetener. Open second beer, relax.
Toss bok choy,green onions, browned noodles and almonds. take another sip of brew, more relaxing.
Add oil/vinegar/sugar toss lightly, finish beer and serve immediately.



Dangerous Chocolate Cake (5 Minute)

4 tbsp flour
4 tbsp sugar
2 tbsp cocoa
1 egg
3 tbsp Milk
3 tbsp oil
3 tbsp choc chips (Optional)
Splash Vanilla

Mix dry ingredients in cup, add egg mix, add oil and mix again, then the chocolate chips and vanilla last.

3 minutes in the microwave!!

Delish!!!


Home made Granola:

You may as well make a really big batch, freezes well in freezer bags.

Dry ingredients mix together in to a bowl

8 cups old fashioned oats {also called rolled oats}
1/2 cups coconut {ribbon or large flake works best)
1 cup chopped pecans
1 cup slivered almonds
1 cup chopped walnuts
1 cup flaxseeds
1 cup wheat germ
add any small seeds you like, sesame, sunflower etc.
2 tbsp cinnamon

Sauce:

2 cups olive oil
1 cup honey
1 cup molasses
1 tbsp vanilla extract
1 tsp almond extract

Mix, you can alter the sweetness to you liking add to dry ingredients, mix until everything is relatively moistened.

Place on cookie sheets, bake at 250 for about 45 mins.

While granola is cooking, assemble fruit mixture enough to equal about 5 cups.

Apricots, dried apple, raisins, cranberries, whatever you like.
Add to granola while it is cooling on pans.
