RECIPIES:
25 Mile Salsa (The WINNING Salsa from the KCBIA Salsa Challenge

All ingredients can be purchased each week at the Kamloops Farmers’ Market. What makes this salsa fantastic is the freshness of ingredients. Anyone can make it taste great with the following fresh market vegetables and herbs:
1 lb ripe tomatoes
1 lb underripe or green tomatoes
1/2 cup of zucchini
1/3 cup finely diced onions
3 garlic cloves, finely diced
1/4 cup coriander/cilantro.....the flowering parts are fine!
1/4 cup chopped nastertium flowers (they add a bit of heat)
1/3 teaspoon finely crushed dried red chilies
1 1/2 tsp coarse sea salt, but don’t be afraid to add more salt
A brief description of ingredients:
Zucchini- You can find yellow, green, white or striped zucchini at the farmers’ market. It’s one of the most inexpensive and delicious summer vegetables. You can use it to bulk up any meal. Try it shredded raw into salads, stir-fried, or grilled for a great summer meal.
Coriander – An extremely easy herb to grow that prefers shady spots. If you don’t have one, plant it wherever. You can cut the tops over and over again. If it goes to flower, you can still use it in any recipe. Let it go to seed, dry it upside down, and you’ll have coriander all winter long.
Nastertium – A plant that produces tons of delicious, edible flowers. They’re slightly spicy and that’s why they’re great in this salsa.
Dried Red Chilies – Dried from the previous year, adding a a bit into salsa will add a great heat. The seeds are hotter than the outside.

Dangerous Chocolate Cake (5 Minute)
4 tbsp flour
4 tbsp sugar
2 tbsp cocoa
1 egg
3 tbsp Milk
3 tbsp oil
3 tbsp choc chips (Optional)
Splash Vanilla
Mix dry ingredients in cup, add egg mix, add oil and mix
again, then the chocolate chips and vanilla last.
3 minutes in the microwave!!
Delish!!!
Home made Granola:
You may as well make a really big batch, freezes well in freezer bags.
Dry ingredients mix together in to a bowl
8 cups old fashioned oats {also called rolled oats}
1/2 cups coconut {ribbon or large flake works best)
1 cup chopped pecans
1 cup slivered almonds
1 cup chopped walnuts
1 cup flaxseeds
1 cup wheat germ
add any small seeds you like, sesame, sunflower etc.
2 tbsp cinnamon
Sauce:
2 cups olive oil
1 cup honey
1 cup molasses
1 tbsp vanilla extract
1 tsp almond extract
Mix, you can alter the sweetness to you liking
add to dry ingredients, mix until everything is relatively
moistened.
Place on cookie sheets, bake at 250 for about 45 mins
While granola is cooking, assemble fruit mixture
enough to equal about 5 cups.
Apricots, dried apple, raisins, cranberries, whatever you like.
Add to granola while it is cooling on pans
